- 2 small acorn squash
- 1.5 tablespoons olive oil
- 1 package First Fresh Mild Italian Chicken Sausage
- 1 tablespoon chopped fresh sage
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon thyme leaves
- 1 cup cooked quinoa
- 1/2 cup of grated parmesan (divided)
- 1/2 cup of gluten free panko crumbs
- 1 egg beaten
- salt and pepper
