Hot Italian Chicken Sausage and Mango Salsa
- Cut mango into small cubes and mix
- Mix mango with the pico de gallo and black beans
- Heat olive oil in nonstick skillet over medium heat. Add in sausage and cook until cooked through, about 8-10 minutes. Turn occasionally so that all sides are browned. Remove and let cool slightly. Slice sausage into rounds.
- Scoop one cup of rice into a bowl and top with chicken sausage and salsa.
