Mexican Chicken Pasta
Spice up your traditional pasta with this Mexican pasta made with First Fresh chicken croquettes. This fun and festive dish brings the heat with its poblano peppers and pepper jack cheese.
- Heat 2 TBS olive oil in a large skillet over medium heat. Add poblano pepper and onion and cook until translucent, about 8 minutes. Add tomatoes, salsa, and taco seasoning, cook five minutes. Stir in sour cream.
- Add pasta to skillet and toss to coat.
- Cook First Fresh Homestyle Croquettes according to package instructions. Top with salsa, then pepper jack cheese, then broil about 5 minutes or until cheese is melted and begins to brown.
- Serve over pasta, top with drizzle of sour cream and fresh cilantro.
